CARROT CAKE (KEK LOBAK MERAH)






Cake anniversery 20.05. 2008...... simple...for my hubby thanks for care me, love me..

CARROT CAKE


Bahan-bahan;

1 cwn (100 gms) pecan/walnut - dibakar & dicincang kasar
2 1/2 cwn (340 gms) carrot mentah - diparut halus
2 cwn (280 gms) tepung serbaguna
1 sudu teh baking soda
1 1/2 sudu teh baking powder
1/2 sudu teh garam
1 1/2 sudu teh serbuk kulit kayu manis
4 biji telur saiz besar
1 1/2 cwn (300 gms) gula halus ( yat guna 1 cawan jek)
1 cwn (240 ml) minyak sayur 9yatt guna minyak jagung)
2 sudu teh esen vanilla
1 biji parutan kulit oren sunkist (yatt tambah yang ni)

note: kalau nk kek lebih lembab, buleh bubuh 1/2 cwn nanas dihancurkan (sejat dulu air dia yer) or applesouce ke dlm adunan, tp kene tambah masa time bakar nnti. (yang ni yatt tak letak)

Cara:


panaskan oven 180 celcius, sediakan loyang & sapu mentega. ketepikan... bakar kacang lebih kurang 8 min pastu sejukkan...then cincang kasar2..ketepikan. kikis kulit carrot & parut halus2...ketepikan. ,dlm mangkuk besar, satukan tepung, serbuk kayu manis, garam, baking soda & baking powder...gaul sebati, ketepikan. amik mixture, pukul telur sampai kembang (dlm 1 min) pastu bubuh gula sikit2...pukul lg sampai pekat & putih (dlm 3-4 min). pastu tambahkan minyak dlm adunan, pukul lg....tambah vanilla pulak...pukul...last sekali bubuh tepung sikit2 n pukul sekejap jek sampai sebati. guna spatula/senduk...masukkan carrot & kacang, gaul skit sume bg rata. siap bubuh dlm tin/loyang pembakar...masuk oven selama 45- 1 jam.

CREAM CHEESE FROSTING


1. Cream cheese- (227grams) & butter 1/4 cawan (57grams)...pukul dgn mixer hingga kembang dgn kelajuan rendah. pastu tambah gula secukup rasa & esen vanilla skit...pukul lg...siap utk disapu pada kek. 2. bila kek dah sejuk, belah kpd 2 keping....tgh2 sapu cream cheese. pastu katupkan dia, & sapu sekeliling kek...kalau nk cantik lg buleh tabur serbuk cinnamon atas dia. 3. akhir sekali leh susun carrot2 kecik tuh wat mcm ladang carrot!!
